Need some sweetening just get a knife and shave off what you need. Unlike making traditional maple candy which are made in rubber molds, maple bricks are made with an old fashioned metal mold. This particular mold has a flat wooden bottom and the brick molds are metal rectangles. The syrup is cooked even more than when regular candy is made. Once it reaches that temperature, it is poured into the molds and allowed to cool.
